Cinnamon Swirl Bread with Bill the Baker

A few months ago I was asked by one of my students to make bread that would be comparable to the Cinnamon Swirl Bread sold by Trader Joe’s.  If you have ever had that bread you know that when it is toasted it has a very unique toasted crumb.  It has a texture that is much crunchier than normal bread that is toasted.  Well I am happy to report that I think we found one that is not only comparable, I think this one is even better.  Neighbors that I have shared this bread with have told me that they think it is the best Cinnamon Raisin Bread they have ever tasted.  Come to this class and make two loaves for yourself and see if you agree with everyone that has tried it.
